Jasmine Westbrooks- Figaro is a Registered Dietitian Nutritionist (RDN) and Certified Diabetes Care and Education Specialist based in Raleigh, North Carolina. She is dedicated to transforming health outcomes through nutrition education, with a focus on preventive care. Jasmine’s interest in nutrition began with her own family’s health struggles, many of which could have been prevented through diet. This personal connection fueled her passion for helping others make sustainable, healthy changes.
She earned a Bachelor of Science in Nutrition Dietetics from the University of Tennessee at Chattanooga and a master’s in nutrition education from Rosalind Franklin University in Chicago. Jasmine’s academic background, combined with her personal experiences, led her to co-found Eatwell Exchange Inc., a 501(c)(3) nonprofit. The organization is dedicated to bridging health disparities by empowering communities to adopt positive, culturally respectful lifestyle changes. Her work focuses on diabetes prevention, management, and creating programs for children and teens, such as culinary workshops and community cooking demonstrations. These efforts aim to make nutrition education more accessible and relevant to diverse populations.
